1 ½tspCream of Tarter(Use 1 cup of Buttermilk instead of Cream of Tarter to make it a fluffy Coffee Cake)
Instructions
Part 1: Topping and Batter
In a large mixing bowl, mix the flour, brown sugar, SweetenFX, salt, nutmeg, cinnamon, olive oil, and coffee grounds with a whisk (we recommend using a blender whisk so the crumbs don't clump up as fast).
Take ½ a cup of the mixture out and set aside for later. This will be used as the cake bar's topping after mixing in the ingredients from Part 2.
Part 2: Batter and Baking
Set the oven to 350°.
Once the topping is set aside, add cinnamon, baking soda, baking powder, an egg, and the cream of tarter to the batter in the bowl and mix together.
Use baking spray (any kind) to spray the baking pan. Pour the batter into the pan using a silicone spatula.
Use the spatula to evenly spread the batter on the baking pan. Once even, sprinkle the crumb topping onto the batter.
Bake at 350° for 25 minutes.
After 25 minutes, use a toothpick to poke the center and four corners of the batter. If the batter is not attached to the toothpick when you pull it out of the batter, your Coffee Cake Bars are ready!
Let the pastry sit for 5 minutes to cool off. Use a knife to cut into bars.
