It’s finally Fall! 🍁
Pumpkin spice lattes, apple picking, pumpkin carving, and chai tea are just a few of the fall activities and treats we have been dying to get to. To kick off this fall season, we made Gluten-Free Coffee Cake Bars that you can pair with your morning, afternoon, and evening coffee.
These bars look and tasted so delicious, so we won’t waste any more time and get right into the recipe.
There are two parts to this recipe. Part one results in making the main mixture and from that we’ll also get the topping for the cake bars. Part two of the recipe will turn the mixture into batter and that’s when the fun stuff happens! Let’s get started!

Pour gluten-free flour, SweetenFX, and brown sugar into a large mixing bowl. Stir using a whisk to make sure that everything is evenly mixed in.

Next, pour the salt, nutmeg, cinnamon, and Select Tea chocolate flavored coffee grounds into the bowl. Mix them in with the flour, sweetener, and sugar. You could just pour everything in together and not do this in separate parts, but we found that this helps even out the flour, sugar, and other ingredients evenly.

Once mixed, pour in vegetable oil. WARNING: It’s going to get really clumpy, so if you have a blender whisk, we recommend you use that to mix the oil in instead of a regular whisk. Reserve ½ of a cup of the mixture. This will be the topping of the cake bars and the rest of the mixture will become the batter.
You’re now ready to move onto PART TWO!
PART TWO
Preheat the oven to 350 degrees. Spray your 9×13 pan with a nonstick spray.
Add baking powder, baking soda, an egg, cream of tartar, and the rest of the cinnamon to the mixture. Now… MIX, MIX, and MIX!

Pour the mixture into your pan and spread it evenly so that the mixture reaches each corner of the pan. Sprinkle the topping you set aside earlier across the mixture evenly.

Put the pan into the oven and bake for 25 minutes!
You now have your Gluten-Free Coffee Cake Bars! WOOHOO You did it! Enjoy these crumbly goodies with any type of coffee whether it be a latte, iced, espresso, you name it. Or you could just eat them by themselves. No shame in that either!

Gluten-Free and Dairy-Free Coffee Cake Bars
Equipment

- Large Mixing Bowl
- Measuring Spoons

- Silicone Spatula

- 9"x13" Baking Pan
Ingredients
Part 1
- 2 ½ cups Gluten-Free All Purpose Flour Or regular Baker's Flour
- 1 cup Organic Brown Sugar
- ½ cup and 1 tbsp SweetenFX Or Granulated Sugar of the same measurements
- ½ tsp Salt
- ⅛ tsp Nutmeg
- 1 tsp Ground Cinnamon
- ¾ cup Olive Oil
- 1 tsp Seelect Tea's Chocolate Flavored Coffee grounds (to give it a little kick)
Part 2
- 1 tsp Ground Cinnamon
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1 Egg
- 1 ½ tsp Cream of Tarter (Use 1 cup of Buttermilk instead of Cream of Tarter to make it a fluffy Coffee Cake)
Instructions
Part 1: Topping and Batter
- In a large mixing bowl, mix the flour, brown sugar, SweetenFX, salt, nutmeg, cinnamon, olive oil, and coffee grounds with a whisk (we recommend using a blender whisk so the crumbs don't clump up as fast).
- Take ½ a cup of the mixture out and set aside for later. This will be used as the cake bar's topping after mixing in the ingredients from Part 2.
Part 2: Batter and Baking
- Set the oven to 350°.
- Once the topping is set aside, add cinnamon, baking soda, baking powder, an egg, and the cream of tarter to the batter in the bowl and mix together.
- Use baking spray (any kind) to spray the baking pan. Pour the batter into the pan using a silicone spatula.
- Use the spatula to evenly spread the batter on the baking pan. Once even, sprinkle the crumb topping onto the batter.
- Bake at 350° for 25 minutes.
- After 25 minutes, use a toothpick to poke the center and four corners of the batter. If the batter is not attached to the toothpick when you pull it out of the batter, your Coffee Cake Bars are ready!
- Let the pastry sit for 5 minutes to cool off. Use a knife to cut into bars.
